Ingredients

  • 3 pounds Bone-in beef short ribs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Soy sauce
  • 0.25 cup Honey
  • 3 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Sriracha
  • 2 tablespoons Brown sugar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 1 tablespoon Sesame seeds, for garnish
  • 2 stalks Green onions, thinly sliced

Directions

Step 1

Season the beef short ribs with salt and black pepper on all sides.

Step 2

In a large skillet, heat vegetable oil over medium-high heat. Sear the short ribs for 2–3 minutes on each side until browned. Transfer the ribs to the slow cooker.

Step 3

In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, sriracha, and brown sugar until well combined.

Step 4

Pour the sauce mixture over the short ribs in the slow cooker, ensuring they are evenly coated.

Step 5

Cover and cook on low for 8 hours or high for 4–5 hours, until the meat is tender and falling off the bone.

Step 6

Once cooked, carefully remove the short ribs from the slow cooker and set aside. Skim any excess fat from the surface of the cooking liquid.

Step 7

In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the cooking liquid in the slow cooker.

Step 8

Turn the slow cooker to high and let the sauce cook for an additional 15–20 minutes until it thickens into a glaze.

Step 9

Return the short ribs to the slow cooker to coat them in the glaze, allowing them to warm back up for 5–10 minutes.

Step 10

Serve the short ribs with the glaze drizzled over the top. Garnish with sesame seeds and sliced green onions. Pair with steamed rice or mashed potatoes for a complete meal.
