Ingredients

  • 2 tablespoons olive oil
  • 2 pieces chicken breast
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 12 ounces penne pasta
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large jalapeño
  • 1 medium yellow onion
  • 3 large garlic cloves
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon red chili flakes
  • 0.25 cup fresh cilantro

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package directions until al dente. Drain and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Rub paprika, chili powder, ground cumin, garlic powder, salt, and black pepper over both sides of the chicken breasts. Cook the chicken in the skillet for 4–5 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the skillet, let rest for 5 minutes, then slice into thin strips.

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the sliced red bell pepper, green bell pepper, jalapeño, and onion. Sauté for 5–6 minutes until softened.
