Ingredients

  • 8 ounces soba noodles
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 large carrot, julienned
  • 1 medium cucumber, julienned
  • 1 large red bell pepper, thinly sliced
  • 2 stalks green onions, thinly sliced
  • 0.25 cup cilantro, chopped
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons crushed peanuts (optional)

Directions

Step 1

Bring a large pot of water to a boil. Cook the soba noodles according to the package instructions (usually 4–5 minutes), then drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, sriracha, grated ginger, and minced garlic to make the dressing.

Step 3

In a large mixing bowl, combine the cooked and cooled soba noodles with the julienned carrots, cucumber, red bell pepper, and sliced green onions.

Step 4

Pour the dressing over the noodle and vegetable mixture, tossing well to coat everything evenly.

Step 5

Add the chopped cilantro and toasted sesame seeds, tossing again to distribute evenly.

Step 6

Transfer the salad to a serving dish and garnish with additional sesame seeds and crushed peanuts, if desired.

Step 7

Serve immediately or refrigerate for up to 1 hour before serving to allow the flavors to meld. Enjoy your Spicy Soba Sesame Salad!
