Ingredients

  • 500 g Shrimp (peeled and deveined)
  • 200 g Fresh green beans (trimmed)
  • 1 large Red bell pepper (sliced into thin strips)
  • 4 cloves Garlic (minced)
  • 1 tbsp Fresh ginger (grated)
  • 3 tbsp Soy sauce
  • 1.5 tbsp Sriracha or chili garlic sauce
  • 2 tsp Honey
  • 1 tbsp Sesame oil
  • 2 tbsp Vegetable oil (for cooking)
  • 1 tsp Cornstarch
  • 2 tbsp Water
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 stalks Green onions (sliced for garnish)
  • 1 tsp Sesame seeds (optional garnish)

Directions

Step 1

In a small bowl, mix the soy sauce, sriracha, honey, cornstarch, and water. Stir until smooth, and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes on each side or until pink and fully cooked. Remove the shrimp from the pan and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for 30 seconds until fragrant.

Step 5

Add the green beans and red bell pepper strips to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 6

Return the cooked shrimp to the skillet, and pour the prepared sauce over the mixture.

Step 7

Toss everything together and cook for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables evenly.

Step 8

Drizzle sesame oil over the stir-fry, stirring to combine, then remove from heat.

Step 9

Garnish with sliced green onions and sesame seeds, if desired, and serve immediately over steamed rice or noodles.
