Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces spaghetti or linguine
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • 0.5 teaspoons red pepper flakes
  • 0.5 cups dry white wine (or chicken broth)
  • 2 tablespoons fresh lemon juice
  • 1 unit zest of 1 lemon
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons fresh parsley, chopped
  • 0.25 cups grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to the package instructions until al dente. Reserve 1/2 cup of the pasta water before draining the pasta, then set aside.

Step 2

While the pasta cooks, prepare the shrimp. Pat the shrimp dry with paper towels and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the shrimp to the pan in a single layer, being careful not to overcrowd them. Cook for 1-2 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

Sprinkle the chopped parsley over the dish and toss once more. If desired, garnish with Parmesan cheese before serving.
