Ingredients

  • 12 oz angel hair pasta
  • 1 lb large shrimp (peeled and deveined)

  • 4 cloves garlic (minced)
  • 1 tsp red pepper flakes
  • 1.5 cups cherry tomatoes (halved)
  • 1 cup chicken or vegetable stock
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp parsley (chopped, plus more for garnish)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to boil. Cook the angel hair pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the shrimp with salt and black pepper. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for 30 seconds, or until fragrant.
