Ingredients

  • 12 oz fettuccine pasta
  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 tsp crushed red pepper flakes
  • 4 cups baby spinach
  • 4 tbsp unsalted butter
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp freshly cracked black pepper
  • 2 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, pat the shrimp dry with a paper towel and season lightly with salt and pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the minced garlic and crushed red pepper flakes. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.
