Cook the penne pasta in a large pot of salted boiling water according to the package instructions. Drain and set aside.
Season the shrimp with 1 tablespoon of cajun seasoning and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the diced onion and red bell pepper. Sauté for 5-7 minutes, until softened.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the canned diced tomatoes, chicken broth, and remaining cajun seasoning, paprika, and red pepper flakes. Stir to combine and bring to a simmer.
Stir in the heavy cream and let the sauce simmer gently for 5 minutes, stirring occasionally.
Return the cooked smoked sausage to the skillet. Then add the shrimp and cook for 3-4 minutes, or until the shrimp are pink and fully cooked.
Add the cooked pasta to the skillet and toss to coat in the sauce. Let everything cook together for 2-3 minutes, allowing the flavors to meld.
Stir in the grated parmesan cheese and season to taste with salt and black pepper.
Garnish with fresh parsley, if using, and serve hot.
