  • 1 tsp paprika

  • 1 14-oz can canned diced tomatoes (with juices)
  • 0.5 cup chicken or vegetable broth
  • 0.5 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup parmesan cheese, grated (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente, then drain and set aside.

In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Once melted, add the peeled and deveined shrimp. Sprinkle with salt, black pepper, and half the paprika. Cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of butter. Sauté the red onion until soft and translucent, about 3-4 minutes.

Return the cooked shrimp to the skillet and stir to coat them in the sauce. Let them heat through for 1-2 minutes.

Add the cooked spaghetti to the skillet and toss gently to coat the pasta evenly with the sauce.
