Ingredients

  • 12 oz Linguine pasta
  • 12 large pieces Shrimp (peeled and deveined)
  • 6 oz Cooked lobster meat (chopped into bite-sized pieces)
  • 3 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 4 cloves Garlic (minced)
  • 1 tsp Red chili flakes
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Dry white wine
  • 2 tbsp Tomato paste
  • 1 cup Heavy cream
  • 2 tbsp Fresh parsley (chopped)
  • 1 tsp Lemon zest
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper
  • 0.5 cup Parmesan cheese (grated, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp to the skillet and sprinkle with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and red chili flakes. Sauté for 1-2 minutes until fragrant.

Add the halved cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until the tomatoes start to break down.

Return the cooked shrimp and add the lobster meat to the skillet. Stir gently to coat the seafood in the sauce and let it cook for 2-3 minutes to heat through.

Add the cooked linguine to the skillet, tossing everything together until the pasta is well coated in the sauce. Mix in the parsley and lemon zest for a fresh kick.
