  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced

  • 28 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 0.5 teaspoon Ground cayenne pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Ricotta cheese
  • 2 cups Monterey Jack cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 9 sheets Lasagna noodles, pre-cooked or no-boil
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Stir in the diced tomatoes, tomato paste, crushed red chili flakes, cayenne pepper, oregano, sugar, salt, and black pepper. Simmer for 10 minutes, stirring occasionally.

Add the shrimp and cook for 2-3 minutes, until they just turn pink. Remove the skillet from heat and set aside.

Cover the lasagna with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.

Let the lasagna rest for 10 minutes before slicing. Garnish with fresh parsley before serving.
