Ingredients

  • 12 oz Penne pasta
  • 2 pieces Chicken breast, boneless and skinless
  • 12 oz Shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 medium Yellow onion, finely diced
  • 4 cloves Garlic cloves, minced
  • 1 tsp Crushed red pepper flakes
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 14.5 oz Canned diced tomatoes
  • 1 cup Heavy cream
  • 2 tbsp Fresh parsley, chopped
  • 1 cup Grated Parmesan cheese
  • 0.5 cup Chicken broth

Directions

Step 1

Cook the penne pasta according to the package instructions in salted water until al dente. Drain and set aside.

Step 2

While the pasta cooks, slice the chicken breasts into thin strips. Season the chicken and shrimp with paprika, salt, and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken strips and cook for 5-7 minutes until golden and cooked through. Remove from the skillet and set aside.

Step 4

In the same skillet, add another tablespoon of olive oil and butter. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside with the chicken.

Step 5

Lower the heat to medium, and in the same skillet, add the diced onion. Sauté for 3-4 minutes until softened. Add the minced garlic and red pepper flakes, cooking for another 1 minute until fragrant.

Stir in the canned diced tomatoes (with their juice) and chicken broth. Simmer for 5-7 minutes to allow the flavors to meld.

Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for 2-3 minutes, then add the cooked chicken and shrimp back to the skillet.

Add the cooked pasta to the skillet and toss to coat everything evenly in the sauce.

Stir in the grated Parmesan cheese and chopped parsley, reserving a little of each for garnish.

Taste the pasta and adjust the seasoning with additional salt, black pepper, or red pepper flakes as needed.
