Ingredients

  • 12 pieces large shrimp, peeled and deveined
  • 2 heads baby bok choy
  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon red chili flakes
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 4 cups chicken or vegetable broth
  • 1 whole lime, juiced
  • 3 stalks green onions, sliced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon sesame oil
  • 1 tablespoon sriracha or chili garlic sauce (optional)

Directions

Step 1

Prepare the rice noodles according to package instructions. Drain, rinse under cold water, and set aside.

Step 2

Wash the bok choy thoroughly and slice each head in half lengthwise. Pat dry.

Step 3

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the minced garlic, grated ginger, and red chili flakes, and sauté for 1-2 minutes until fragrant.

Step 4

Add the chicken or vegetable broth, soy sauce, and fish sauce to the pot. Bring to a gentle simmer.

Step 5

Add the shrimp to the broth and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp with a slotted spoon and set aside.

Step 6

Add the bok choy halves to the broth and simmer for 3-4 minutes, or until tender but still slightly crisp. Remove and set aside.

Step 7

Stir the lime juice and sesame oil into the broth. Taste and adjust the seasoning with more soy sauce, fish sauce, or lime juice if needed.

Step 8

To assemble, divide the rice noodles between two bowls. Arrange the bok choy and cooked shrimp on top of the noodles.

Step 9

Ladle the hot broth over the noodles and toppings, ensuring everything is warmed through.

Step 10

Garnish each bowl with sliced green onions, chopped cilantro, and a drizzle of sriracha or chili garlic sauce if desired. Serve immediately and enjoy your spicy, flavorful noodle bowl!
