Ingredients

  • 14 oz firm tofu
  • 2 tbsp cornstarch
  • 3 tbsp sesame oil
  • 6 cups mixed salad greens
  • 1 medium red bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 1 small cucumber, thinly sliced
  • 2 stalks scallions, thinly sliced
  • 0.25 cup cilantro, chopped
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp sesame seeds

Directions

Step 1

Press the tofu for 15-20 minutes to remove excess water. Cut it into 1-inch cubes.

Step 2

In a mixing bowl, toss the tofu cubes with cornstarch until coated evenly.

Step 3

Heat 2 tablespoons of sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until crispy and golden on all sides, about 8-10 minutes. Remove from heat and set aside.

Step 4

In a small bowl, whisk together soy sauce, rice vinegar, sriracha, honey (or maple syrup), minced garlic, grated ginger, and 1 tablespoon of sesame oil to make the spicy sesame dressing.

In a large salad bowl, combine the mixed greens, sliced red bell pepper, julienned carrot, sliced cucumber, scallions, and chopped cilantro.
