Ingredients

  • 400 grams spaghetti or thin wheat noodles
  • 3 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 2 tablespoons sriracha or chili garlic sauce
  • 2 tablespoons rice vinegar
  • 1.5 tablespoons honey or maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons peanut butter, creamy or chunky
  • 3 stalks green onions, thinly sliced
  • 75 grams roasted peanuts, chopped
  • 1 cup Thai basil leaves, torn
  • 1 tablespoon toasted sesame seeds (optional)
  • 1 whole lime, cut into wedges

Directions

Step 1

Bring a large pot of water to a boil. Cook the noodles according to the package instructions until al dente. Drain the noodles, rinse with cold water, and toss with 1 tablespoon of sesame oil to prevent sticking. Set aside.

Step 2

In a medium bowl, whisk together the soy sauce, sriracha, rice vinegar, honey, minced garlic, grated ginger, and peanut butter until smooth and well combined.

Step 3

Heat the remaining 2 tablespoons of sesame oil in a large skillet or wok over medium heat. Pour in the prepared sauce and cook for 2-3 minutes, stirring, until the sauce thickens slightly.
