Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the spicy Italian sausage, breaking it into small pieces with a spoon. Cook until browned and fully cooked through, about 8 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced red and green bell peppers, onion, and garlic. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened. Add the spinach and cook for 1-2 additional minutes, until wilted. Remove from heat.
In a large mixing bowl, whisk together the eggs, milk, heavy cream, hot sauce, salt, and black pepper until well combined.
Layer half of the cubed bread in the bottom of the prepared baking dish. Top with half of the cooked sausage, half of the vegetable mixture, and half of the shredded cheeses (cheddar and mozzarella). Repeat the layers with the remaining bread, sausage, vegetables, and cheeses.
Slowly pour the egg mixture evenly over the entire dish, making sure the bread is fully soaked. Let the strata sit for 10-15 minutes to allow the bread to absorb the liquid.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 20 minutes, or until the strata is puffed, golden brown, and the center is set.
Remove the dish from the oven and let it cool for 5-10 minutes before slicing and serving.
