Ingredients

  • 1 lb spicy Italian sausage
  • 2 tbsp olive oil
  • 1 yellow onion

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 28 oz crushed tomatoes
  • 2 cup chicken broth
  • 2 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Slice the spicy Italian sausage into 1-inch pieces, then brown them in the pot for 5–7 minutes, turning occasionally. Remove the sausage and set aside.

Step 3

Peel and dice the yellow onion, then add it to the pot. Sauté for 3–4 minutes until softened.

Mince the garlic cloves and add them to the pot. Cook for 1 minute until fragrant.
