Directions

Step 1

Wash and prepare all the vegetables: core and quarter the Roma tomatoes, trim the stems from the jalapeños, peel and coarsely chop the red onion, and peel the garlic cloves.

Step 2

Preheat a skillet or grill pan over medium-high heat. Add the tomatoes, jalapeños, red onion, and garlic cloves directly onto the hot surface, drizzling with the olive oil. Cook for 4-5 minutes, turning frequently, until the vegetables are slightly charred and softened.
