Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.
In a small saucepan over low heat, combine rice vinegar, sugar, and salt. Stir until the sugar and salt have dissolved. Once dissolved, remove from heat and let it cool slightly.
Transfer the cooked rice to a large, shallow bowl. Gradually add the vinegar mixture, gently folding the rice with a spatula to combine. Allow rice to cool to room temperature.
Chop the fresh salmon into small, bite-sized pieces. In a small bowl, mix together mayonnaise and sriracha sauce to create spicy mayo.
