Ingredients

  • 15 ounces canned chickpeas (garbanzo beans)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Drain and rinse the canned chickpeas, then pat them dry thoroughly with a clean kitchen towel or paper towels. Removing excess moisture is key for getting them crispy.

Step 3

Spread the dried chickpeas onto the prepared baking sheet in an even layer.

Step 4

Roast the chickpeas in the preheated oven for 20 minutes to dry them further and start the crisping process. Shake the tray halfway through to ensure even roasting.

Step 5

While the chickpeas are roasting, prepare the spice mixture by combining paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper in a small bowl.

Step 6

After 20 minutes, remove the chickpeas from the oven. Drizzle them with olive oil and toss well to coat evenly. Then sprinkle the spice mixture over the chickpeas and stir to coat.

Step 7

Return the chickpeas to the oven and roast for another 15-20 minutes, or until they are golden and crispy. Shake the tray halfway through for even roasting.

Step 8

Remove the chickpeas from the oven and let them cool for 5 minutes. They will continue to crisp up as they cool.

Step 9

Serve immediately as a snack or store in an airtight container at room temperature for up to 3 days.
