  • 1 cup red lentils
  • 3 cups water
  • 1 cup coconut milk

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 1 cup canned diced tomatoes
  • 2 tablespoons vegetable oil
  • 2 tablespoons, chopped fresh cilantro
  • 1 tablespoon lemon juice
  • 1 teaspoon (adjust to taste) salt
  • 4 pieces pita bread
  • 2 tablespoons olive oil
  • 1 teaspoon paprika

Directions

Step 1

Rinse the red lentils in cold water until the water runs clear, then drain and set aside.

Step 2

In a medium pot, heat 2 tablespoons of vegetable oil over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until fragrant.

Add the chopped onion and cook, stirring frequently, for 4-5 minutes until softened.
