Ingredients

  • 2 cups Whole wheat flour
  • 0.5 teaspoon Salt (for dough)
  • 0.75 cup Water
  • 1 cup Rajma (red kidney beans), cooked and mashed
  • 1 medium Onion, finely chopped
  • 2 small Green chilies, finely chopped
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Coriander leaves, finely chopped
  • 0.5 teaspoon Cumin powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.25 teaspoon Salt (for filling)
  • 3 tablespoons Oil or ghee (for cooking parathas)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour and 0.5 teaspoon of salt. Gradually add water and knead into a soft, pliable dough. Cover and let it rest for 15 minutes.

Step 2

In another bowl, combine the mashed rajma, finely chopped onion, green chilies, ginger, coriander leaves, cumin powder, red chili powder, garam masala, and 0.25 teaspoon of salt. Mix well to create the spicy filling.

Step 3

Divide the dough into 8 equal portions and roll each portion into a ball. Divide the rajma filling into 8 equal portions as well.

Step 4

Take one portion of dough and roll it out into a small disc. Place one portion of the filling in the center of the disc. Bring the edges of the dough together to seal the filling completely and form a stuffed ball.

Step 5

Gently roll out the stuffed ball into a flat paratha, being careful not to let the filling spill out. Repeat with the remaining dough and filling.

Step 6

Heat a tawa or flat skillet over medium heat. Place a rolled-out paratha on the hot tawa and cook until you see bubbles or light brown spots appear, then flip it.

Step 7

Drizzle a small amount of oil or ghee around the edges of the paratha and cook for 1-2 minutes on each side until golden brown and fully cooked.

Step 8

Repeat the cooking process with the remaining parathas. Serve hot with yogurt, pickle, or chutney for a satisfying meal.
