Ingredients

  • 4 pieces Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Cooked chicken breast, shredded
  • 1 cup Red bell pepper, diced
  • 1 piece Fresh jalapeño, finely chopped
  • 2 pieces Green onions, finely sliced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 2 tablespoons Olive oil
  • 0.5 cup Sour cream
  • 0.5 cup Guacamole
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat a large non-stick skillet or griddle over medium heat.

Step 2

In a small bowl, mix the shredded chicken with cumin and chili powder until evenly coated.

Step 3

Place one tortilla on a clean surface and sprinkle 1/4 cup of shredded cheese evenly over half of it.

Step 4

Top the cheese with 1/4 cup of the spiced chicken, 2 tablespoons of diced red bell pepper, some chopped jalapeño, and a sprinkling of green onions.

Step 5

Sprinkle another 1/4 cup of cheese over the fillings, then fold the tortilla in half to form a semi-circle.
