Ingredients

  • 2 cups Bisquick mix
  • 1 cup Pumpkin puree
  • 1 cup Milk
  • 2 large Eggs
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Cloves
  • 2 tablespoons Brown sugar
  • 2 tablespoons Vegetable oil or melted butter
  • 0 optional for serving Maple syrup
  • 0 optional for topping Whipped cream

Directions

Step 1

In a large mixing bowl, whisk together the Bisquick mix, cinnamon, nutmeg, ground ginger, cloves, and brown sugar.

Step 2

In a separate bowl, combine the pumpkin puree, milk, eggs, and vegetable oil (or melted butter). Whisk until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few small lumps are okay.

Step 4

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Step 5

Scoop about 1/4 cup of the batter onto the skillet for each pancake. Spread slightly with the back of the spoon if needed.

Step 6

Cook for 2-3 minutes or until small bubbles form on the surface and the edges start to look set. Flip carefully and cook for an additional 2-3 minutes until golden brown and cooked through.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve warm with maple syrup and whipped cream, if desired.
