  • 1.5 cups Mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 0.5 medium Red onion, thinly sliced
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.

Bring a medium pot of water to a boil. Peel and slice the potatoes into thin rounds (about 1/8-inch thick). Parboil the potato slices for 4-5 minutes, until they’re slightly tender but not fully cooked. Drain and set aside.
