  • 1 15-ounce can canned chickpeas, drained and rinsed
  • 1 14-ounce can crushed tomatoes
  • 3 cups vegetable broth
  • 0.5 cup creamy peanut butter
  • 2 tablespoons lime juice
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons peanuts, roasted and chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
