Ingredients

  • 4 medium Russet potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 2 tablespoons Cornstarch
  • 2 stalks Green onions (finely chopped)
  • 0.5 teaspoon Red chili flakes
  • 3 cups Vegetable oil (for frying)
  • 2 tablespoons Water

Directions

Step 1

Peel and dice the potatoes into even-sized chunks. Place them in a large pot of salted water and boil for 15-20 minutes or until fork-tender.

Step 2

Drain the cooked potatoes and transfer them to a large mixing bowl. Mash them thoroughly until smooth.

Step 3

Add salt, chili powder, smoked paprika, ground cumin, garlic powder, cornstarch, and water to the mashed potatoes. Mix well to form a smooth yet firm mixture.

Step 4

Fold in the finely chopped green onions and red chili flakes. Adjust seasoning if needed.

Step 5

Using your hands, scoop a small amount of the mixture and roll it into bite-sized balls, around 1 inch in diameter. Repeat until all the mixture is used.

Step 6

Heat vegetable oil in a heavy-bottomed pan or deep fryer over medium-high heat until it reaches 350°F (175°C).

Step 7

Carefully drop the potato balls into the hot oil in small batches, ensuring not to overcrowd the pan.

Step 8

Fry for 3-4 minutes per batch, turning occasionally, until golden brown and crisp on all sides.

Step 9

Remove the fried potato bumps with a slotted spoon and drain excess oil on a plate lined with paper towels.

Step 10

Serve hot with your favorite dipping sauce or a dollop of sour cream for extra flavor.
