  • 1 medium zucchini, sliced
  • 1 liter chicken or pork broth
  • 3 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean red chili paste)
  • 2 teaspoons fish sauce
  • 2 teaspoons sugar
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 stalks green onions, sliced
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Heat the vegetable oil in a large soup pot over medium heat.

Step 2

Add the cubed pork shoulder and sear on all sides until golden brown. Remove and set aside.

In the same pot, add the diced onion, minced garlic, and minced ginger. Sauté for 2-3 minutes until fragrant.
