Ingredients

  • 1 pound Pork shoulder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic cloves
  • 1 inch Ginger
  • 1 tablespoon Red chili flakes
  • 0.25 cup Soy sauce
  • 4 cups Chicken broth
  • 2 cups Water
  • 9 ounces Ramen noodles
  • 2 heads Baby bok choy
  • 2 for garnish Scallions
  • 1 teaspoon Sesame oil
  • 2 pieces Soft-boiled eggs
  • 2 tablespoons Sriracha

Directions

Step 1

Season the pork shoulder with salt and black pepper evenly on all sides.

Step 2

Heat vegetable oil in a large pot over medium-high heat. Add the pork shoulder and sear it on all sides until browned, about 8-10 minutes.

Step 3

Remove the pork from the pot and set aside. In the same pot, reduce the heat to medium and add minced garlic and sliced ginger. Sauté until fragrant, about 2 minutes.

Step 4

Add red chili flakes and sauté for another minute before pouring in the soy sauce, scraping any brown bits from the bottom of the pot.

Step 5

Return the pork shoulder to the pot. Add chicken broth and water, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 1 hour or until the pork is tender.

Step 6

Remove the pork from the pot and shred it using two forks. Return shredded pork to the pot.

Step 7

Add ramen noodles and sliced baby bok choy to the pot, cooking for an additional 5 minutes until the noodles are tender.

Step 8

Stir in sesame oil and Sriracha into the broth. Adjust seasoning to taste with more salt or soy sauce if needed.

Step 9

Ladle the ramen into bowls, ensuring each serving gets an ample amount of pork and vegetables.

Step 10

Top each bowl with a halved soft-boiled egg and garnish with sliced scallions.

Step 11

Serve hot and enjoy your spicy pork ramen!
