Ingredients

  • 500 grams pork shoulder or pork belly
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons gochugaru (Korean chili flakes)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or sugar
  • 4 cloves garlic
  • 1 tablespoon ginger
  • 4 stalks green onions
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 2 tablespoons vegetable oil

Directions

Step 1

Thinly slice the pork shoulder or pork belly. To achieve ultra-thin slices, partially freeze the pork for about 45 minutes before slicing.

Step 2

In a large mixing bowl, combine the gochujang, gochugaru, soy sauce, sesame oil, honey or sugar, minced garlic, grated ginger, and rice vinegar. Mix well to form a smooth marinade.

Step 3

Add the sliced pork to the marinade. Mix thoroughly to ensure each piece of pork is evenly coated. Cover the bowl and let the pork marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

Step 4

Slice the green onions into thin rings and set aside. Reserve a small handful for garnish.

Step 5

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 6

Add the marinated pork to the hot skillet. Spread it out evenly to ensure even cooking.

Step 7

Cook the pork for about 8-10 minutes, stirring occasionally, until it is cooked through and slightly caramelized. Stir in the sliced green onions during the last 2 minutes of cooking.

Step 8

Transfer the cooked spicy pork bulgogi to a serving platter and sprinkle with sesame seeds and reserved green onions for garnish.

Step 9

Serve the spicy pork bulgogi hot, with steamed rice, lettuce wraps, or your choice of side dishes.
