Ingredients

  • 2 racks Baby back ribs
  • 2 tablespoons Brown sugar
  • 1 tablespoon Paprika
  • 1 tablespoon Smoked paprika
  • 1.5 teaspoons Garlic powder
  • 1.5 teaspoons Onion powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Barbecue sauce

Directions

Step 1

Preheat your oven to 300°F (150°C) or prepare a grill for low, indirect heat.

Step 2

If necessary, remove the silver membrane from the back of the ribs using a knife and a paper towel for grip.

Step 3

In a small bowl, mix together the brown sugar, paprika, smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper, salt, and black pepper to create the spice rub.

Step 4

Drizzle olive oil over both sides of the ribs, then generously apply the spice rub to coat all sides evenly.

Step 5

Wrap the ribs tightly in aluminum foil and place them on a baking sheet if baking, or directly on the cool zone of the grill if grilling.

Step 6

Cook for 2.5 to 3 hours until the ribs are tender and the meat pulls back from the bones slightly.

Step 7

If baking, remove the ribs from the oven, unwrap them, and drain any excess liquid. If grilling, carefully remove the foil.

Step 8

Brush both sides of the ribs with the barbecue sauce.

Step 9

If using an oven, broil the ribs on high for 5-7 minutes to caramelize the sauce. If grilling, transfer the ribs to the hot zone and grill for 5-10 minutes to char the sauce slightly.

Step 10

Remove the ribs from the heat and let them rest for 5-10 minutes before slicing and serving.
