  • 6 medium-sized fresh beets
  • 2 cups white vinegar
  • 1 cup water
  • 0.75 cup granulated sugar
  • 1 tablespoon kosher salt
  • 3 whole garlic cloves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon red pepper flakes
  • 1 cinnamon stick
  • 1 teaspoon mustard seeds

Directions

Step 1

Trim the beet greens, leaving about 1 inch of the stems intact, and scrub the beets clean under running water.

Step 2

Place the beets in a large pot and cover with water. Bring to a boil over medium-high heat and cook for 30–40 minutes, or until the beets are fork-tender.

Step 3

Drain the beets and let them cool slightly. Once cooled, peel the skins off using your hands or a paper towel. Slice the beets into 1/4-inch thick rounds or wedges, depending on your preference.

Step 4

In a medium saucepan, combine the white vinegar, water, granulated sugar, and kosher salt. Heat over medium heat, stirring occasionally, until the sugar and salt have dissolved, about 5 minutes.

Add the garlic cloves, black peppercorns, red pepper flakes, cinnamon stick, and mustard seeds to the brine mixture. Simmer for 2–3 minutes to infuse the flavors.
