  • 1/3 cup peanut butter (creamy)
  • 1/2 cup coconut milk
  • 1/4 cup chicken broth
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 2 tbsp crushed peanuts (for garnish)
  • 2 tbsp cilantro (optional, for garnish)
  • 4 servings cooked rice or noodles

Directions

Step 1

Slice the pork tenderloin into thin strips. In a small bowl, combine the pork slices with 2 tablespoons of soy sauce and 2 teaspoons of cornstarch. Mix well and set aside to marinate for 10 minutes.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until just cooked through. Remove the pork from the skillet and set aside.
