Ingredients

  • 6 whole (about 2 pounds) ripe peaches
  • 1 medium, diced red onion
  • 2 small, finely chopped jalapeño peppers
  • 1 tablespoon, grated fresh ginger
  • 2 minced garlic cloves
  • 0.75 cups apple cider vinegar
  • 0.5 cups, packed brown sugar
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons red chili flakes
  • 1 teaspoon mustard seeds
  • 1 teaspoon salt
  • 0.25 cups water

Directions

Step 1

Peel, pit, and dice the peaches into small cubes. Set them aside.

Step 2

In a large saucepan or pot, heat a small amount of oil over medium heat.

Step 3

Add the mustard seeds and toast until they start to pop, about 1 minute.

Step 4

Stir in the diced red onion and sauté until softened, about 3 minutes.

Add the chopped jalapeños, grated ginger, and minced garlic. Cook for another 2 minutes, stirring frequently.
