  • 1 cup small pasta (e.g., ditalini or elbow)
  • 3 cups fresh spinach
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large soup pot over medium heat.

Step 2

Add the spicy Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked, about 7-8 minutes. Remove the sausage with a slotted spoon and set aside.
