Ingredients

  • 1.5 cups Rolled oats
  • 0.75 cups All-purpose flour
  • 0.5 cups Brown sugar
  • 0.5 cups Unsalted butter (melted)
  • 1 large Egg
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground cayenne pepper
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 teaspoons Baking soda

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, ground cinnamon, cayenne pepper, salt, and baking soda. Stir well to evenly distribute the dry ingredients.

Step 3

In a smaller bowl, whisk together the melted butter, egg, and vanilla extract until the mixture is smooth and homogeneous.

Step 4

Pour the wet ingredients into the bowl of dry ingredients and mix until a sticky, cohesive dough forms.

Step 5

Using a tablespoon or small cookie scoop, portion out the dough and place it onto the prepared baking sheets, leaving about 2 inches between each for spreading.

Step 6

Gently flatten each scoop of dough with the back of a spoon or your fingers to create thin circles.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and crisp.

Step 8

Remove the crisps from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 9

Once cooled, store the crisps in an airtight container at room temperature for up to a week.
