Ingredients

  • 4 pieces spicy Italian sausage links
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 1 large red bell pepper, diced
  • 2 medium carrot, peeled and sliced
  • 2 celery stalks, diced
  • 28 ounces crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 15 ounces cannellini beans, drained and rinsed
  • 1 teaspoon red chili flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven or stockpot over medium heat.

Step 2

Add the Italian sausage links and cook until browned on all sides, about 8-10 minutes. Remove the sausage and set aside to cool. Once cooled, slice the sausage into 1/2-inch pieces.

Step 3

In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook until softened, about 3-4 minutes.

Step 4

Stir in the minced garlic, red bell pepper, carrot, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Step 5

Add the crushed tomatoes, chicken or vegetable broth, and cannellini beans to the pot. Stir to combine.

Step 6

Return the sliced sausage to the pot. Add the red chili flakes, dried oregano, dried basil, bay leaf, salt, and black pepper. Stir well.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 30 minutes, stirring occasionally.

Step 8

Taste and adjust seasoning if necessary. Discard the bay leaf before serving.

Step 9

Serve hot, garnished with chopped parsley if desired. Pair with crusty Italian bread for a complete meal.
