Ingredients

  • 500 grams Mutton
  • 2 large Onion
  • 2 tablespoons Ginger-Garlic Paste
  • 3 small Green Chilies
  • 0.5 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Garam Masala
  • 0.5 teaspoon Black Pepper Powder
  • 1 teaspoon Salt
  • 10 leaves Curry Leaves
  • 3 tablespoons Oil
  • 100 ml Water
  • 2 tablespoons Coriander Leaves

Directions

Step 1

Clean the mutton thoroughly under running water and cut it into bite-sized pieces. Set aside to drain.

Step 2

Slice the onions thinly. Slit the green chilies and set aside.

Step 3

Heat oil in a deep pan over medium heat. Add the sliced onions and saute until they turn golden brown.

Step 4

Add ginger-garlic paste and slit green chilies to the pan. Saute for 2-3 minutes until the raw smell disappears.

Step 5

Add turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine all the ingredients.

Step 6

Add the mutton pieces to the pan. Stir well to coat the mutton with the spices and let it cook for about 5 minutes.

Step 7

Add water to the pan. Cover the pan with a lid and let the mutton simmer on low heat for about 25 minutes until it is tender.

Step 8

Once the mutton is cooked, remove the lid and increase the heat to medium. Add black pepper powder and garam masala.

Stir the mutton occasionally and let it fry until the water evaporates and the oil separates from the spices.

Step 10

Add curry leaves and mix well. Fry for another 5 minutes until the mutton is dry-fried and well-roasted.

Garnish with freshly chopped coriander leaves before serving.

Serve hot with rice, naan, or chapati for a flavorful meal.
