Ingredients

  • 4 tablespoons Yellow mustard seeds
  • 2 tablespoons Brown mustard seeds
  • 1 cup White vinegar
  • 1 cup Water
  • 1 tablespoon Honey
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt

Directions

Step 1

1. Combine the yellow mustard seeds, brown mustard seeds, white vinegar, and water in a medium-sized bowl. Stir well, cover, and let sit at room temperature for 24–48 hours to allow the seeds to soften and absorb most of the liquid.

Step 2

2. Once the seeds are soaked, transfer the mixture to a blender or food processor.

Step 3

3. Add honey, ground turmeric, paprika, cayenne pepper, and salt to the mustard seed mixture.

Step 4

4. Blend the mixture until it reaches your desired consistency. For a grainier mustard, blend for a shorter time, and for a smoother mustard, blend longer.

Step 5

5. Taste and adjust seasonings as needed. If it's too thick, add a small amount of water or vinegar to thin it to your preferred consistency.

Step 6

6. Transfer the mustard to sterilized glass jars or containers with tight lids.

Step 7

7. Refrigerate for at least 24 hours before serving to allow the flavors to meld and develop.

Step 8

8. Store in the refrigerator for up to 1 month. Use as a condiment, marinade, or sauce base.
