Ingredients

  • 1.5 cups basmati rice
  • 3 cups water
  • 2 cups button mushrooms
  • 2 tablespoons cooking oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 green chili, finely chopped
  • 1 medium tomato, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoons turmeric powder
  • 0.75 teaspoons red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Rinse the basmati rice thoroughly under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.

Step 2

Heat the cooking oil in a large pan or pot over medium heat.

Step 3

Add the chopped onions and sauté until they are golden and translucent, about 5 minutes.

Step 4

Stir in the minced garlic and green chilies, and cook for 1-2 minutes until fragrant.

Step 5

Add the chopped mushrooms to the pan and cook for 5-7 minutes until they release their moisture and start to brown.

Step 6

Stir in the chopped tomato, ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Cook for 3-4 minutes until the spices are well combined and the tomato has softened into the mixture.

Step 7

Add the drained basmati rice to the pan and gently stir to coat the rice in the spice mixture.

Step 8

Pour in 3 cups of water, stir once, and bring the mixture to a boil.

Step 9

Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15-20 minutes, or until the rice is tender and the water is fully absorbed.

Step 10

Once cooked, remove the pan from heat and let it rest, covered, for 5 minutes.

Step 11

Fluff the rice gently with a fork, sprinkle with garam masala and fresh chopped cilantro, and serve hot.
