  • 120 milliliters unsulphured molasses
  • 1 large egg
  • 290 grams all-purpose flour
  • 2 teaspoons baking soda
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons ground ginger
  • 0.5 teaspoons ground cloves
  • 0.25 teaspoons cayenne pepper
  • 0.25 teaspoons kosher salt
  • 50 grams coarse sugar (for rolling)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat the softened butter, dark brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add the molasses and egg to the mixture and beat until fully combined and smooth.
