Ingredients

  • 8 oz ramen or udon noodles
  • 2 tablespoons white or yellow miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced or grated
  • 2 stalks scallions, thinly sliced
  • 1 tablespoon sesame seeds, toasted
  • 1 small cucumber, julienned
  • 0.25 cup fresh cilantro leaves
  • 1 teaspoon neutral oil (e.g., canola or vegetable oil)

Directions

Step 1

Cook the noodles according to the package instructions. Once cooked, drain and rinse under cold water to prevent sticking. Set aside.

Step 2

In a small bowl, whisk together the miso paste, soy sauce, sambal oelek, sesame oil, honey, rice vinegar, garlic, and ginger until smooth. Adjust seasoning to taste if needed.

Step 3

Heat the neutral oil in a small pan over medium heat. Add the minced garlic and ginger (if using fresh), and sauté for 30 seconds until fragrant.

Step 4

Pour the miso sauce mixture into the pan and cook for 1-2 minutes, stirring constantly, until the sauce is warmed through and slightly thickened. Remove from heat.

Step 5

Toss the cooked noodles in the warm miso sauce until evenly coated. Make sure the noodles are well combined with the sauce.

Step 6

Divide the saucy noodles between two bowls and garnish with sliced scallions, toasted sesame seeds, julienned cucumber, and fresh cilantro leaves for a burst of freshness.

Step 7

Serve immediately and enjoy your flavorful Spicy Miso Noodles!
