  • 6 cups Vegetable broth
  • 15 ounces Red kidney beans (canned, drained and rinsed)
  • 1 medium Zucchini (diced)
  • 1 cup Green beans (trimmed and cut into bite-sized pieces)
  • 1 cup Raw pasta (small shapes like ditalini or elbow macaroni)
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0 N/A Salt (to taste)
  • 0 N/A Black pepper (to taste)
  • 0 N/A Grated Parmesan cheese (for serving, optional)
  • 0 N/A Chopped fresh parsley (for garnish, optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the sausage, breaking it up into small chunks with a wooden spoon. Cook until browned and cooked through, about 5-6 minutes. Remove the sausage from the pot and set it aside.

Step 2

In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables begin to soften.

Stir in the raw pasta and continue to simmer for another 8-10 minutes, or until the pasta is tender but still has a slight bite.
