Ingredients

  • 1 Cob loaf (round bread loaf)
  • 1 tablespoon Olive oil
  • 1 Brown onion, finely chopped
  • 2 Garlic cloves, minced
  • 500 g Ground beef (minced beef)
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 2 tablespoons Tomato paste
  • 400 g Canned diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 250 g Cream cheese, softened
  • 1 cup Cheddar cheese, grated
  • 2 Green onions, finely sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Cut off the top of the cob loaf and hollow out the inside, leaving a sturdy shell. Set the top aside, and tear the removed bread into dipping pieces.

Step 3

Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another minute.

Add the ground beef to the pan and cook, stirring, for 5–7 minutes or until fully browned.

Step 5

Stir in the cayenne pepper, smoked paprika, ground cumin, and tomato paste. Cook for 1–2 minutes until fragrant.

Add the canned diced tomatoes, Worcestershire sauce, salt, and black pepper. Simmer the mixture for 10 minutes, stirring occasionally, until thickened.

Remove from heat and stir in the softened cream cheese. Mix until fully combined and creamy.

Carefully spoon the mixture into the hollowed-out cob loaf. Top with grated cheddar cheese.
