Ingredients

  • 200 grams Millet flour
  • 100 grams All-purpose flour
  • 2 teaspoons Instant yeast
  • 200 milliliters Warm water
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 tablespoon Sugar
  • 1 teaspoon Ground paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili flakes
  • 2 cloves Minced garlic
  • 2 tablespoons Fresh cilantro (optional, chopped)

Directions

Step 1

In a large mixing bowl, combine the millet flour, all-purpose flour, instant yeast, salt, sugar, ground paprika, ground cumin, and chili flakes.

Step 2

Warm the water to about 40°C (104°F) and stir in the olive oil. Gradually add this mixture to the dry ingredients while mixing.

Add the minced garlic and cilantro (if using) and knead the dough by hand or with a stand mixer for about 8-10 minutes, until smooth and elastic.
