Ingredients

  • 500 g beef sirloin, thinly sliced
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 large yellow onion, thinly sliced
  • 1 large red bell pepper, julienned
  • 1 large green bell pepper, julienned
  • 3 medium tomatoes, diced
  • 1 tsp chili flakes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp cayenne pepper
  • 1 tsp paprika
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp lemon juice

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat.

Step 2

Add the thinly sliced beef sirloin to the skillet and stir-fry for 3-4 minutes until browned. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil along with the minced garlic and sliced yellow onion. Sauté for 2 minutes until softened and fragrant.

Step 4

Add the julienned red and green bell peppers to the skillet and stir-fry for another 3 minutes until they begin to soften.

Step 5

Stir in the diced tomatoes, chili flakes, ground cumin, ground coriander, cayenne pepper, paprika, salt, and black pepper. Cook for 2 minutes to combine the flavors.

Step 6

Return the browned beef to the skillet and mix well with the vegetable and spice mixture. Lower the heat to medium and cook for 5-7 minutes, stirring occasionally, until the beef is fully cooked and tender.

Step 7

Turn off the heat and sprinkle the chopped parsley and lemon juice over the stir-fry. Mix gently to incorporate.

Step 8

Serve hot with steamed rice, couscous, or flatbread.
