  • 6 large Flour tortillas
  • 500 grams Ground beef (or ground turkey for a lighter option)
  • 1 medium Yellow onion, chopped
  • 3 cloves Garlic cloves, minced
  • 400 grams (1 can) Black beans, rinsed and drained
  • 200 grams Corn kernels (fresh, canned, or frozen)
  • 250 ml Tomato sauce
  • 400 grams (1 can) Diced tomatoes, drained
  • 2 tablespoons Taco seasoning mix
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 200 grams Shredded cheddar cheese
  • 200 grams Shredded Monterey Jack cheese
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 100 grams Sour cream (optional for topping)
  • 1 medium Sliced jalapeños (optional for topping)
  • 2 tablespoons Vegetable oil

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 9-inch springform pan or deep dish baking dish.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Add the chopped onion and cook until translucent, about 3 minutes.

Step 3

Add the minced garlic and cook for another 1 minute until fragrant.

Step 4

Stir in the ground beef (or turkey) and cook until browned, breaking it up with a spatula as it cooks. Drain any excess fat.

Add the taco seasoning mix, chili powder, and ground cumin to the skillet. Stir well to distribute the spices evenly.

Mix in the black beans, corn kernels, tomato sauce, and diced tomatoes. Bring the mixture to a simmer and cook for 5 minutes until slightly thickened. Remove from heat.

Place one flour tortilla at the bottom of the greased springform pan. Spread a portion of the meat and bean mixture evenly over the tortilla, followed by a layer of shredded cheddar and Monterey Jack cheese.

Repeat the layering process (tortilla, meat mixture, cheese) until all ingredients are used, finishing with a tortilla topped with a generous layer of cheese.

Bake the torte in the preheated oven for 25 minutes, or until the cheese on top is melted and golden brown.

Carefully remove the torte from the oven and let it cool for 5 minutes. If using a springform pan, release the sides of the pan.
