Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 large yellow onion
  • 4 pieces garlic cloves
  • 1 inch fresh ginger
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons cayenne pepper
  • 0.5 teaspoons turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup chicken stock
  • 0.25 cup heavy cream
  • 2 tablespoons fresh cilantro
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

In a mixing bowl, combine yogurt, lemon juice, ground cumin, coriander, smoked paprika, cayenne pepper, turmeric, garam masala, salt, and black pepper to make the marinade.

Step 2

Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or for best results, overnight.

Step 3

Thinly slice the onions, mince the garlic, and grate the ginger. Set aside.

Step 4

Heat the olive oil in a large skillet over medium heat. Add the chicken thighs skin-side down and sear for 3-4 minutes on each side until golden brown. Remove and set aside.

Step 5

In the same skillet, melt the butter and sauté the onions until caramelized, about 10-12 minutes.

Step 6

Add the garlic and ginger to the onions and cook for another 2 minutes until fragrant.

Step 7

Pour in the chicken stock and bring to a gentle simmer, scraping any browned bits from the bottom of the skillet.

Step 8

Return the seared chicken thighs to the skillet. Lower the heat, cover, and let simmer for 25-30 minutes or until the chicken is cooked through.

Step 9

Stir in the heavy cream and adjust salt and pepper to taste. Simmer for another 2 minutes.

Step 10

Garnish with fresh cilantro and serve hot with rice or naan bread.
