Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 4 oz cream cheese, softened
  • 2 tbsp hot sauce
  • 1 tsp red pepper flakes
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil

Directions

Step 1

Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente, according to package instructions. Drain and set aside.

Step 2

In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1–2 minutes, forming a roux.

Step 3

Slowly pour in the milk and heavy cream while whisking to avoid lumps. Continue to cook until the mixture starts to thicken, stirring frequently.

Step 4

Lower the heat and add the shredded cheddar, Monterey Jack, Parmesan, and softened cream cheese in batches, stirring until completely melted and smooth.

Stir in the hot sauce, red pepper flakes, paprika, cayenne pepper, garlic powder, salt, and black pepper. Taste and adjust the seasoning as desired.
