Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions for al dente. Drain and set aside, reserving 1/2 cup of pasta water.
While the pasta cooks, slice the beef sirloin into thin strips against the grain. Season with salt and black pepper.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips in a single layer and cook for 1-2 minutes on each side until browned. Remove from the skillet and set aside.
